A sweet, tart, and bubble cranberry gin fizz

1 cup fresh cranberries
1 cup sugar
1 cup water
1 egg white
1 oz lemon juice
2 oz Gin
Ice
Prosecco, chilled
Rosemary sprig
Instructions
Cranberry Simple Syrup
- Heat the water and sugar in a small saucepan over medium heat until the sugar is dissolved. Add in the cranberries and bring everything to a boil then reduce the heat to low. As the cranberries begin to break down you will hear them pop, start smashing them with a spoon or fork.
- Once the liquid thickens to a syrup consistency, remove the pot from the stove.
- Strain the syrup into a container using a mesh strainer and discard the cranberries.
Cranberry Gin Fizz
- Add the egg white, lemon juice, 1 oz of cranberry simple syrup, and gin to a cocktail shaker. Dry shake for one full minute then add in the ice and shake for 30 seconds. Pour the cocktail into a highball glass and top will prosecco. Garnish with a small piece of rosemary.
